VALENCIAN PAELLA COMES TO ESPOLÍN
The most famous dish from “la terreta,” which is the Valencian paella, is now part of the seasonal “off-menu” offerings at Espolín, providing diners with an even more authentic Valencian experience.
Chef Nayo Yuste has introduced it to reinforce the Valencian identity and to celebrate the restaurant’s local culinary heritage. With a twist on the original recipe, adding chicken and duck, he has created an exceptional culinary experience, full of flavor and authenticity.
For the recipe, and in line with Espolín’s philosophy, top-quality ingredients have been selected, and a lot of dedication has gone into its preparation to honour tradition and evoke the most original flavours. The ideal season to enjoy Valencian paella is during the spring and summer months when the flavours reach their peak expression, which is why we have incorporated it at Espolín and will have it available until autumn arrives.
